Thanksgiving has come and gone and you are probably left with a ton of turkey leftovers. Instead of making boring turkey sandwiches, try these delicious recipes to spice up your turkey leftovers.
Breakfast: Turkey Hash with Sunny Side-Up Eggs
You can use that leftover turkey to make a yummy breakfast to start your day and it is pretty quick and easy!
Ingredients
- 1 lb. red potatoes
- 1 ½ tsp. salt
- 3 tbsp. olive oil
- 4 tsp. olive oil
- 1 small yellow onion
- 3 clove garlic
- 1 red bell pepper
- 1 ½ tbsp. chopped fresh thyme
- ½ tsp. fresh ground pepper
- 3 c. diced leftover white and dark meat turkey
- 8 large eggs
Directions
- Use a medium pot filled with cold water and place it over high heat. Bring potatoes and 1 tsp. salt to a boil. Cook for 3 minutes, drain the potatoes and put to the side.
- In a large skillet, heat 2 tbsp. oil over medium to low heat. Sauté the onion and garlic while stirring occasionally until soft, which will take about 5 minutes. Add red bell pepper, 1 tbsp. thyme, pepper, the remaining salt and sauté for 3 minutes.
- Increase the heat to medium-high and add 1 tbsp. oil, the potatoes and turkey and then cook for about 5 minutes, stirring occasionally. Add ¼ cup water and stir. Cover and reduce the heat to low and cook for 10 minutes. Remove hash from the heat and cover with loose foil.
- Using two large skillets over medium heat, heat 2 tsp. oil in each of them. Add 4 eggs to each skillet and fry until whites are cooked, which will take about 4 minutes. Divide the hash among serving plates and top each of them with a fried egg. Lastly, garnish with thyme.
Lunch: Turkey Cobb Sandwiches
These sandwiches put regular turkey sandwiches to shame and are perfect for any lunch.
Ingredients
- 3 c. cubed leftover turkey
- 2 c. chopped butter lettuce
- 1 large avocado
- 1 large Roma tomato
- 1 small red onion
- 4 strips cooked bacon
- 2 oz. blue cheese
- 4 tbsp. mayonnaise
- balsamic vinegar
- 2 tsp. fresh ground pepper
- 1 tsp. salt
- 6 pitas
Directions
- Using a large bowl, combine the first 7 ingredients and set to the side.
- Using a small bowl, whisk together the mayonnaise, vinegar, pepper and salt.
- Add dressing to the salad and toss
- For each sandwich, fill each of 2 pita halves with ½ cup salad.
Dinner: Turkey Pasta Bake
The turkey pasta bake is full of flavor and is a great dish for dinner. It takes about an hour or two to make, but well worth the wait.
Ingredients
- unsalted buuter
- 8 oz. penne pasta
- 2 tbsp. olive oil
- 1 package cremini mushrooms
- kosher salt
- pepper
- 1 medium onion
- 2 stalk celery
- 1 tbsp. all-purpose flour
- ½ c. low sodium chicken broth
- 1 c. grated parmesan cheese
- 4 oz. cream cheese
- 1 ½ tsp. grated lemon zest
- 2 tbsp. fresh lemon juice
- 3 c. shredded leftover turkey
- 1 c. frozen peas
- ½ c. fresh flat-leaf parsley
Directions
- Heat over to 375 degrees F. Lightly butter a shallow broiler-proof 2-quart casserole dish. Cook pasta according to directions on package and drain pasta and return to pot.
- Heat 1 tbsp. oil in large skillet over medium-high heat. Add mushrooms, ¼ tsp. salt and cook for about 4 to 5 minutes or until golden brown while tossing occasionally then transfer to a plate.
- Reduce heat to medium and add remaining tbsp. oil with onion, celery and ½ tsp. of salt and pepper. Cover and cook for about 6 to 8 minutes or until vegetables are tender while stirring occasionally.
- Sprinkle flour over vegetables and cook for about 1 minute while stirring. Stir in the broth and bring to boil. Reduce heat and simmer for 3 to 4 minutes while stirring occasionally then remove from heat.
- Add cream cheese, lemon zest, lemon juice and ¾ cup of Parmesan cheese and stir until the cream cheese melts. Add the sauce to the pasta with the turkey and toss to coat then add mushrooms, peas and parsley.
